BAKED FISH with HUSH PUPPY STUFFING

4 - 6# red fish or other fish
2 - 3 lemons
1/2 c celery, chopped
1/4 c onion, chopped
18 - 20 hushpuppies
1 can mushrooms, drained
salt and pepper
olive, pimento for garnish

Salt dressed fish and set aside. Cook hush puppies; crumble them and
add celery, - pepper. Place fish in greased baking dish. Pack fish
cavity with stuffing. Form the head from extra stuffing and decorate
with olive for eye and pimento for mouth.
Place lemon slices on top
of fish. Dribble lemon juice all over. Cover with foil and bake one
hour at 425 degrees.

Open foil and bake 15 minutes longer.
